FRESH AGUACATE TOSTADAS

Yield: 4 Tostadas
 
Ingredients
   Aguacate:
    - 2 Avocados
    - 1/2 Lime - Juice
    - 1/4 Cup Cilantro*
    - 1/4 Cup Medium Salsa
    - Salt & Pepper to Taste
Garnish:
    - 1 Tomato*
    - 1 Shallot
    - Pickled Radishes*
    - Chile De Arbol Salsa
    - 1 Jalapeno
    - 1/2 Cup Micro-Beets
    - 4 Tosradas
 
Directions:
  1) Seed and scoop out avocado pulp and place in a medium bowl.
  2) Add lime juice, salt, pepper and gently stir to retain avocado chunkiness. 
  3) Fold in cilantro and medium salsa, set aside.
  4) Dice tomato into cubes.
  5) Slice jalapenos into thin coins.
  6) Slice shallots into thin rings.
  7) Spread a 1/2 inch layer of aguacate onto tostada.
  8) Top with tomato, shallots, micro-beets, pickled radishes, jalapenos and chile de arbol salsa.
  9) Enjoy.

The owners of BODEGA LOYA, Ralph and Marty Loya, come from generations of family farmers. Both were raised eating fresh fruit and vegetables from various local farms. Marty grew-up on the 100 year old farm where BODEGA LOYA currently sits. The bodega was created by Ralph retrofitting an original adobe shed and tool room. They both believe in contributing to the healthy food initiative in their community which is slowly becoming a rare commodity
